Woohoo food galore! I love going on picnics, especially when there are 70 food bloggers and each is bringing a plate or bottle ^^ We had so much delicious food - paella, mini quiches, jelly, donuts, fairy bread, toasted marshmallows, and oh so much more! Didn’t take many pics this year but it was just as fun as last year’s Mad Hatter picnic & Christmas picnic :D Many thanks to Suze & Helen for organising x

roast beef baguettes
My contribution of roast beef baguettes!
In the process of making mediterranean roastbeef baguettes&am... on Twitpic Taken from my phone the night before the picnic.
This was my first time making baguettes.. making the recipe up as I went and I was pretty happy with the results, so I’ll share my recipe :)

Ingredients:
 

  • 1 baguette
  • 350g roast beef
  • Wholegrain mustard
  • Salad leaves
  • Chives
  • Brie
  • Char-grilled eggplant
  • Semi sun-dried tomatoes
  • Spread: mix of whole egg mayonnaise, sour cream, and cream cheese
  • Method:
    1. Using a serrated bread knife, halve the loaf of baguette lengthwise.


    2. Cooking Tip! Ok this is the important part, if you want to load your baguettes with a lot of filling: scoop out some of the soft bread so you create a ‘baguette boat’.

    3. In a bowl, gently mix the mayonnaise, sour cream, and cream cheese until combined. Taste along the way and smear the spread along the two ‘baguette boats’.

    4. Add a few tsp of wholegrain mustard and smear it on the spread.

    5. Sprinkle on some finely snippets of chive.

    6. Layer: semi sun-dried tomatoes, roast beef, some more creamy spread, salad leaves, brie, and char-grilled eggplant.

    7. Season with some black pepper (I forgot to do this for the picnic ^^”).

    8.
    Put the other half of the ‘baguette boat’ on top and slice into desired widths.

    9. Cut paper-towels into long strips, fold and wrap around the center of the baguette. Fasten with tape.

    10. Grab some ribbon and tie around the paper-towel to secure; also for aesthetic purposes :)
